Graham Cracker Chocolate Chip Snacking Cake



Yes, I know it has been a long while since I have posted on my blog. Life has been crazy this last couples of months. I did make the November Cake for the Cake slice bakers, but just never posted it. But I am back and ready to start baking again.

I was excited to do this cake because it sounded so good. But I have to admit that I was disappointed. The cake didn't rise very well and it was very dry. I even cut the baking time by about 7 minutes. The frosting was mediocre, and you couldn't really taste the marshmallow fluff. Even though I didn't enjoy, my kids did. I hate to admit this, but I let them have some for breakfast this morning and they gobbled it all up. I think they just like sugar and gobble it up every time I give them some. I follow many other baking and cooking blogs, but I am new myself to doing this. If anyone out there has any tips or suggestions for me, that would be great.

Pumpkin chocolate chip muffins

I am so excited to be starting my baking blog. It gives me a chance to share my love for baking. As of last month, I became a member of the Cake Slice Bakers. This month we started baking from Cake Keeper Cakes by Lauren Chattman. I am so excited and know I am going to have a good time.




The first cake we baked was the pumpkin chocolate chip pound cake. I decided instead to make muffins, and they turned out wonderul. They were very moist and delicious. The nice thing about baking muffins is they don't take as long to bake. It was only about 20 minutes, compared to about an hour when making it in a loaf.
The recipe is simple and easy to follow. Just about anybody could make it. the one thing I did different in the recipe was I used Light I Can't believe its Not Butter. You can't even tell the difference.

My goal for this blog is to have fun baking and sharing it with others. Along the way I hope to share a few tricks that I have learned along the way. For example, I learned that you can substitute ground flax seed for eggs when baking. I have tried it in a few recipes, and I will share those soon. I don't want to give away to much now or no one will come back to ready my blog.
